Consumer practices and expectations - (International Association for Food Protection)
February 1, 2008 – 5:21 pmConsumers are increasingly relying on prepared, but not ready-to-eat foods because they are convenient, quick, and easy. However, recent foodborne illness outbreaks suggest that some consumers are not properly preparing these foods to ensure that the product is safe to consume. This session will present findings from focus group research conducted for USDA and other recent research on consumers practices and expectations for prepared, but not ready-to-eat foods. The session will discuss consumers perceptions of meat and poultry product labeling features and how consumers use labeling features and other information to determine whether products are not fully cooked and require cooking for safety. In addition to labeling features such as the phrase cook thoroughly and the Safe Handling Instructions label, consumers rely on the appearance of the product and the type of product packaging.
