IOWA: Foodborne illnesses need to kept in perspective - (Agri News)

Waverly, Iowa — Food-borne illness needs to be put in perspective, says Jim Dickson, Iowa State University animal science professor.
The United States has a population of 300 million, and one in four will get a food-borne illness each year. Of those, 325,000 will be hospitalized and 5,000 will die.
“I’m not making light of this because one death is too many if that person is a member of your family, but in 2003 164,000 people died from injuries with 43,000 of those deaths from motor vehicle accidents,” Dickson said. “We see news media reports all the time about how unsafe food kills 5,000 people each year, but no one considers not driving a car because 43,000 people got killed in car accidents.”
Improper holding, inadequate cooking, cross-contamination, unsafe food sources and poor personal hygiene all contribute to food-borne illness, Dickson said. Complicating the situation, many food service workers don’t receive sick time. […]
