It’s no secret that, according to this editorial, among the ways to prevent E. coli contamination in meat is for the beef industry to improve the slaughtering process to keep fecal matter from coming in contact with the carcasses.
Another is to change the cattle diet from grain to dried grass and other foodstuffs that dramatically reduce the presence of E. coli bacteria in the intestines (lot more complicated than that — dp)
But the industry has shown little incentive to change. Outbreaks of potentially deadly E. coli contamination, followed by massive meat recalls, have, as a result, become all too common.
The editorial says that one reason for industry foot-dragging could be that the U.S. Department of Agriculture, which inspects meat plants, has been quietly allowing producers to sell E. coli-tainted meat if it is cooked.
After the contaminated beef is cooked, it appears in supermarkets and grocery stores as meat loaf, precooked […]
