SOUTH DAKOTA: Our View: Inspections give patrons confidence - (The Daily Republic)

Health inspections at restaurants come, at least, twice a year. Inspectors check for myriad troubles, ranging from the storage of foods to the temperature of the water used to wash dishes.
Scores below 80 on a 100-point scale are considered a failed inspection. The problem is that more businesses statewide are failing those checks, according to the Office of Health Protection.
The editorial says that an agent from the OHP said last week that the agency is having more difficulty in recent years bringing food-service businesses — anything from restaurants to hot-dog stands — into compliance. Because of that, the Office of Health Protection will institute a new policy that will reduce from two to one the number of consecutive health inspections that a foodservice establishment may fail before being called to a hearing in Pierre.
