October 1, 2007 – 6:54 pm

The newest food safety infosheet, a graphical one-page food safety-related story directed at food handlers, is now available at foodsafetyinfosheets.ksu.edu.
Infosheet highlights:
Improper cooling of dish linked to outbreak
19 people developed serious food poisoning symptoms after eating traditional Turkish chicken and lamb guvech
The dish had reportedly been left out for about eight hours before being refrigerated.
Small numbers of Clostridium perfringens are often present after cooking and multiply to dangerous levels if improperly cooled and stored.
Infosheets are created weekly by iFSN and are posted in restaurants, retail stores, on farms and used in training throughout the world. If you have any infosheet topic requests, or photos, please contact Ben Chapman at bchapman@uoguelph.ca
