MU studies language barrier in food safety - (Columbia Tribune)

The U.S. Department of Agriculture announced a $600,000 food safety grant for the University of Missouri-Columbia to find a better way to teach Hispanic restaurant workers about food safety.
“More than 20 percent are Hispanic employees in the restaurant industry,” said lead researcher Seonghee Cho of MU’s hotel and restaurant management faculty. “There actually are training tools in Spanish, but none of them … look into cultural sensitivity.”
The USDA grants announced yesterday range from $304,000 to $2.5 million and were awarded to 17 universities nationwide. The grants are intended to promote research on improving food safety and reducing the incidence of food-borne illness.
The goal of the three-year project, Cho said, is to improve the knowledge and attitude of Hispanic restaurant employees toward food safety as well as develop and test a computer-based training program.
