AUSTRALIA: Raw or not? the great cheese debate - (The Manly Daily)
July 4, 2008 – 5:37 pmFOR the past decade or so the great cheese debate in this country has revolved around the merits of the time-honoured, artesan way of raw milk cheesemaking, and conversely, today’s universally preferred method which uses only pasteurised milk.
By law, Australian cheesemakers are required to use pasteurised milk for all cheese production but many outspoken foodies including the Slow Food movement believe prohibiting the manufacture of raw milk cheese is not doing the local industry or consumers any favours.
They argue that raw milk naturally reflects its original environment the soil, climate and the animal from whence it came which in turn produces cheese that delivers more flavour and distinctiveness.
