BOSTON — Health officials will roll out a new campaign at health centers, clinics, hospitals and senior centers to educate residents about salmonella prevention, after the city saw a 27 percent spike in cases between 2006 and 2007.
A task force was established last fall after a rise in cases over the summer — typically the time of year with the most salmonella outbreaks. In 2007, the spike was higher than normal with 169 cases, and the task force urged the Boston Public Health Commission to launch an educational campaign citywide. Salmonella is a bacteria commonly caused by not washing hands while handling food, leaving food out over time, using the same cutting board for both raw meat and other foods, and not cooking food to proper temperatures (consuming fresh produce? – dp)
